Ingredients
- 4 Chicken Breast
- 4 Eggs
- Bread crumbs, We used panko
- Frying oil, We used olive oil
- 2 Mutti Napoletana Sugo Semplice Sauce
- Mortadella shaved
- Smoked provolone, or your preferred cheese
- Cracked pepper
- Flaky salt
- Lemon
- Fresh parsley
Method
- 1)
Lay your chicken breast down flat, and slowly cut chicken in half.
- 2)
Lay the chicken between two pieces of baking paper and hammer the breast until they are even.
- 3)
Preheat the grill.
- 4)
Grab two bowls, in one bowl crack and whisk four eggs and in the other pour in your breadcrumbs.
- 5)
Dunk your chicken breast into the egg wash and then place into the bread crumbs. (the key to a good crumb is to cover the chicken entirely in the breadcrumbs and then use your fist to press the crumbs in to make sure the crumbs have stuck).

Grab a pan and bring your oil temp up to 170 degrees. You can either pan fry or deep fry.

Fry your chicken in batches until nice and golden, place on a wire rack to drain off any excess oil.
- 8)
To create the parmigiana, spread the Mutti Napoletana Sugo Semplice sauce over the top of each chicken schnitzel.
- 9)
Layer the shaved mortadella and smoked provolone onto the top of the sauce.
- 10)
Place your pami’s under the grill for five minutes or until the cheese has melted and is nice and golden.
- 11)
Garnish with pepper, salt, lemon juice and fresh parsley.

Serve while hot.
