Ingredients
- 400 g Rice
- 2 tbsp Peanut oil
- 200 g Bacon
- 1 knob Ginger
- 2 cloves Garlic
- 1 Carrot
- 2 handfuls Peas
- 4 Eggs
- 4 sprigs Spring onion, plus extra for garnish
- 6 tbsp Soy sauce
- 1 tbsp Rice wine vinegar
- 1 tsp Sesame oil
- Sesame seeds, to garnish
Method
- 1)
Cook 400g of rice however you cook yours and pop into fridge on a flat plate to dry (can do this earlier in the day).

Put 2 tablespoons of peanut oil into hot pan.
- 3)
Add 200g of bacon to pan for a couple of mins.
- 4)
Add finely chopped knob of ginger + 2 finely chopped cloves of garlic in for 30 seconds.
- 5)
Add 1 finely chopped large carrot and 2 handfuls of peas, cook for a minute.
- 6)
Move everything to one side of pan and add in 4 eggs to empty side and scramble for a couple of mins.

Once scrambled, add rice in and mix.
- 8)
Add in 4 finely chopped sprigs of spring onion, 6 tablespoons soy sauce, 1 tablespoon rice wine vinegar + 1 teaspoon sesame oil, mix.
- 9)
Remove from heat, serve into bowls and top with chopped spring onion and a sprinkle of sesame seeds.
