Fish tacos (a very easy version) when Nick catches a big Kingfish and whips together some super simple tacos! #pieceofpearce (well apart from the catching it bit…) Feel free to swap the kingfish out for any other fish you have handy! Who’s keen to give them a go?

Ingredients
- 1 Chorizo sausage
- 1 cob Corn
- 300 g Kingfish, (approx)
- 6 small Tortillas
- Iceberg lettuce
- 1 handful Coriander
- Mayonnaise
- Hot sauce
- 1 Lime
Method
- 1)
Cook down 1 sausage of chorizo diced in pan on high heat.
- 2)
After 2 mins, add kernels of one cob of corn.
- 3)
Once corn cooked (approx. 3 mins), transfer corn and chorizo to bowl (leave chorizo oil in pan).
- 4)
Slice up kingfish into thick strips.
- 5)
Grill in pan with residual chorizo oil on high heat for approx. 1 minute on each side (or until cooked to your liking). Then set aside.
- 6)
Heat tortillas cleaned pan (with no oil), on a medium heat as per cooking instructions of tortillas you’re using.
- 7)
Finely shred some iceberg lettuce and finely chop coriander.
- 8)
Construct taco with – mayo, lettuce, fish, corn and chorizo, and finished off with coriander, some hot sauce and a squeeze of lime.
