Poppy’s 2nd Birthday Flourless Orange Cake!! This was so so delicious and other than the construction of the number 2 was really easy!
Flourless Orange Cake

- 4 Oranges
- 6 Eggs
- 250 g Almond meal
- 250 g Caster sugar
- 1 tsp Baking powder
- Butter (to grease tin)
- 6 Cardamon pods
- 250 mL Boiling water
- 5 tbsp Honey
- Flaked almonds
- Icing sugar
Boil 2 oranges in water until soft (whole oranges took approx 2 hours, finely cut took 15 mins).
Preheat oven to 190C.
Crack eggs into blender and add boiled oranges allow to cool so not to scramble eggs).
Blitz in blender or food processor.
Add blender mixture to mixing bowl then add almond meal, caster sugar, baking powder to bowl and mix.
Butter up a cake tin or loaf tin, pour mixture in, flatten out with spatula.
Put in oven on 190C for 45 mins.
Make syrup by adding cardamon, zest and juice of 2 oranges, honey and boiling water to a pot.
Boil down for approx 30 mins.
When cake and syrup is ready, pour syrup over cake. Sprinkle flaked almonds and dust with icing sugar.
This makes enough for a normal loaf/cake tin half of the “2” picture, enough for approx 8 ppl.
