This Ginger & Lime Crudo combines sashimi-grade fish, homemade ginger oil, lime zest, and a touch of palm sugar for a fresh and vibrant dish. Perfect for pairing with your favorite drinks or serving to friends.

Ingredients

  • 1 Ginger Knob
  • Olive Oil
  • 1 Green Chilli
  • 1 Lime
  • Yellowfish Tuna, or any sashimi grade fish
  • Baby Capers
  • Palm Sugar

Method

Ginger Oil

  • 1)

    Grab a knob of ginger, place on tin foil, drizzle with olive oil and place into the oven at 180c for 1 hour

  • 2)

    Remove from the over and slice the ginger, place in a squeeze bottle and top with olive oil. Let it sit overnight.

Crudo

  • 1)

    Finely chop a green chilli

  • 2)

    Zest and segment one lime. Finely dice the segments

  • 3)

    Roughly chop baby capers

  • 4)

    Slice some sashimi quality fish

  • 5)

    To plate up, lay out your sashimi and drizzle over some ginger oil, add a sprinkle of chilli, lime zest, lime segments and micro plane over some palm sugar.
