For this recipe, I used a mix of King Edward, Wood Ear, Lion’s Mane, and Shiitake mushrooms. Ingredients
- Gourmet mushrooms, (We used a mixture of King Edward, Wood Ear, Lions Maine and Shittake Mushrroms)
- Sourdough loaf
- 1 Garlic clove
- 1 Tsp Fresh thyme
- 1 Lemon
- 1 Tbsp Butter
- 1 Tbsp Creme fraiche
- Black pepper
- Flaky salt
- Fresh parsely
- 4 Poached eggs
- Goats cheese
Method
- 1)
Whack a pan on high heat and add in olive oil, garlic clove, one teaspoon of fresh thyme leaves and the zest of one lemon, mushrooms, squeeze in the juice of half a lemon, one tablespoon of butter, one tablespoon of creme fraiche. Give it a toss with some fresh parsley.

Get some toast on the go and poach your eggs (see poaching recipe).

To plate up, spread goats cheese onto your toast, add the mushrooms, the poached egg and some fresh parsley.
