Green Goddess Salad

Ingredients

Salad Dressing

  • 2 Avocados
  • 2 Garlic Cloves
  • 3 Spring Onions, Only use the white parts, keep the green tops for the salad
  • 1/2 Bunch Basil
  • 1/2 Bunch Mint
  • 1/2 Bunch Dill
  • 2 Tbsp Dijon Mustard
  • 2 Lemon
  • 50ml Olive Oil
  • Flakey Salt
  • 1 Tsp Honey

Salad

  • 3 Spring Onion, The green tops
  • 1/2 Bunch Basil
  • 1/2 Bunch Mint
  • 1/2 Bunch Dill
  • 280g Spinach
  • 1 Bunch Kale
  • 2 Green Chilli, Optional
  • Macadamias, Or any nut you prefer

Method

  • 1)

    Blitz your Macadamia’s in the blender, remove and place in a bowl to the side.

  • 2)

    In the blender add your Avocado, garlic cloves, spring onion, basil, mint, dill, dijon mustard, lemon zest and juice and olive oil. Blend until smooth.

  • 3)

    Give it a taste and balance with salt and honey. Pop back on the blender (See Note 1)

  • 4)

    To make the green salad you need a sharp knife and take your time to get everything cut finely. Cut your mint, dill, spring onion, kale and spinach and place into a bowl. The basil is best left whole, just pull the basil leaves off the stems and place into the bowl. 

  • 5)

    Pour your dressing over the top as close as you can to serving, toss and then sprinkle your macadamias over the top

Notes

Note 1: People often go wrong with this salad dressing balancing the flavours. Every time you make it you should balance it as the ingredients can vary in size; lemons can be sour or sweet. You need to balance the salt, acid and sweetness.

      Balancing something means taste testing it a see if it need more salt, more sweetness, more acidity
