Ingredients

  • 500 grams 00 Plain Flour, + extra for dusting
  • 300 grams water
  • 4 grams dried yeast
  • 12 grams salt

Method

    In a mixing bowl combine the flour and water and cover and set to side for 2hrs

    Add the yeast and salt and knead until dough feels smooth (approx 3mins). Divide the dough into 8 equal portions and dust bench with some flour and roll them out with a rolling pin flipping the dough between rolls to ensure it doesn’t stick to the bench. Place each rolled flatbread between a sheet of baking paper dusted with flour and let them sit covered with baking paper and a tea towel for an hour.

    Heat a non stick fry pan on medium heat and place the flatbread in until it bubbles 30 sec – 1min then flip over cook the other side for 30sec. You don’t want to overcook these as they’ll become dry cook them until they are just cooked through. Test the first one and adjust times accordingly. Repeat with the rest and serve warm.
