Homemade Ricotta and Zucchini Salad

Ingredients

  • 2 Litres Milk
  • 3 Lemons
  • Salt
  • Zucchini
  • 3 Olive Oil

Method

  • 1)

    Pour 2L milk into saucepan on low heat and bring to boil.

  • 2)

    Stir Intermittently to ensure the milk is not sticking to the pan as it heats up.

  • 3)

    Once it comes to boil, turn off heat and add the juice of one lemon stirring through until the mixture splits into ricotta and whey.

  • 4)

    Strain ricotta from whey (keep the whey to use in other things i.e stock).

  • 5)

    Finely slice 3 Zucchinis.

  • 6)

    Add generous amount of salt and olive oil to the sliced zucchini.

  • 7)

    Add ricotta, juice and rind of two lemons to the zucchini. Toss together and serve
