Heaps of you requested side/salad inspiration for the festive season so we have a few coming your way! This salad is so delicious, very straightforward and an easy way to feed a big crew.
Honey Roasted Sweet Potato Salad

- 3 Medium to large sweet potatoes
- 3 tsp Honey
- 9 tsp Olive oil
- 2 Lemons or limes
- 1 pinch Chilli flakes
- Black pepper
- 3 heaped tbsp Natural yoghurt
- 4 sprigs Spring onions
- 1 bunch Coriander
- 1 Green chilli, (optional)
Preheat oven to 180C.
Wash sweet pots well, cut into 8ths.
In a cup mix together honey and olive oil.
Pour over sweet potatoes in roasting dish.
Zest lemons or limes over the top and add a pinch of chili flakes and a good whack of cracked black pepper.
Give it a good mix around with your hands.
Put in oven for 1.5hrs on 180C, should have nice caramelisation when done.
In a bowl, mix yoghurt with the juice of one lime/lemon and a pinch of salt.
Finely chop spring onion, don’t add the very bottom white bits as we don’t want it to be too oniony.
Chop coriander and finely chop green chilli.
Put sweet potatoes in a salad bowl or on a platter and top with a pinch of salt, drizzle over yoghurt, sprinkle with spring onion, coriander and chilli.
Finish with a squeeze of lemon or lime.
