Honey Soy Beef Stir-fry

Ingredients
- 2 bunches Broccolini
- 1 handful Green beans
- 1 handful Snow peas
- 3 sprigs Spring onion
- 500 g Eye fillet beef , (or other beef cut)
- 2 tbsp Corn flour
- 100 mL Soy sauce
- 3 tbsp Honey
- 3 tsp Zested ginger
- 3 tsp Zested garlic
- 1 Lime
- Chilli, (optional)
- Black pepper
- Peanut oil
- Sesame seeds
- Sesame oil
Method
- 1)
Chop broccolini long ways and take ends off beans and snow peas.
- 2)
Finely slice spring onion.
- 3)
Finely slice beef and dust in corn flour.
- 4)
To 100ml, of soy sauce, add honey, zested ginger, zested garlic, zest and juice of lime, (optional to add chilli here) and crack of black pepper. Then stir together.

Get pan hot and add a drizzle of peanut oil.
- 6)
Add in broccolini and beans on high heat for 1 minute.
- 7)
Add 50ml, of water to pan, then pop lid on and cook for another 2 minutes. Then remove from pot and discard any excess water.
- 8)
Place pan back on high heat, add 3 tablespoons of peanut oil and heat it up.
- 9)
Place beef into pan on high heat, spread out so cach piece is touching the pan. Cook in pan for 3 mins, then free up the beef (should be nice and crispy on one side).

Add in greens and sauce to pan and mix. Leave for a couple of minutes.

Take off heat. Finish with some chopped spring onion, sesame seeds and a few drops of sesame oil.
