Mud Crab Cocktail Sliders

Ingredients

  • 2 Picked mud crabs of meat
  • 1 Ripe avo
  • 1 Head iceberg lettuce
  • 1 Heaped tablespoon fresh dill
  • 1 Heaped tablespoon fresh chives
  • 1 Lemon or lime
  • 4 Tablespoons Kewpie mayo, + extra
  • 4 Soft rolls (bap or brioche)

Method

  • 1)

    Get 2 mud crabs worth of meat, see my how to cook a mud crab video if you are cooking them yourself. Add a finely chopped tablespoon of both fresh chives and dill to meat in a bowl. Add the zest of a lemon or lime and small squeeze of the juice, approx 2 tablespoons. Add four tablespoons of kewpie Mayo. Give it a gentle mix.

    Very finely slice iceberg lettuce.

    Cut slithers of avo

  • 4)

    To assemble either cut rolls fresh or lightly toast rolls in butter in a pan then add some kewpie, avo, crab, lettuce and the lid!
