Oysters are the perfect entertaining food! They are a celebration of produce and need very little done to them to elevate them to a Christmas worthy starter. For these one I’ve just poured a beautiful Vermentino over super finely diced some French shallots and dressed each oyster before it hit the table.

Ingredients
- 12 Freshly Shucked Oysters
- 1 French Shallot
- 1 bottle Vermentino (or other white)
Method

Arrange your freshly shucked oyster in a bowl on top of some ice, rock salt, or stones.
- 2)
Super finely dice one French shallot and add it to a cup. Add a generous splash of white wine and make sure you break up the shallots
- 3)
Spoon over the dressing over each oyster then serve immediately and enjoy!
