This recipe is real game changer! It is so handy to have this recipe up your sleeve because we feel like it really makes any dish that would normally require canned tomatoes SO MUCH BETTER! It’s delicious on pizza, with pasta or as we have made it with gnocchi, but can also be used in our parma and lamb shank recipes and so many more!! It’s amazing when treated well, how good simple ingredients can taste!!
Nick’s Homemade Tomato Sauce with Gnocchi

Ingredients
Tomato Sauce
- 2kg Ripe tomatoes
- 100ml Olive oil
- Salt
- Black pepper
- 1 Lemon
Gnocchi
- 3 packets Gnocchi
- Olive oil
- 1 Lemon
- Chilli flakes (optional)
- Parmesan or pecornio
Method
Tomato Sauce
- 1)
Remove stalks from tomatoes and wash
- 2)
Add to a big pot wiht 100ml of olive oil
- 3)
Put the lid on medium heat and leave for 5 minutes
- 4)
After 10 minutes, the tomatoes should be starting to blister and soften. Get a potato masher and begin to mash all the tomatoes up
- 5)
Put lid back on a low medium heat (enough to bubble away) for another 5 minutes (15 minutes in total)

After 5 minutes, leave on low simmer with lid off for liquid to evaporate. Stir and mash intermittently

Turn off heat after 1 hour total

Give a good pinch of salt (taste as cannot take away salt but can add more), multiple good cracks of black pepper, zest of one lemon and give it a stir
Gnocchi
- 1)
Get a big pot of water on the boil
- 2)
Add gnocchi to water and cook as per instructions (generally until some of the gnocchi starts to float)
- 3)
Put some olive oil in a pot and add cooked gnocchi to get some colour on it
- 4)
Add sauce to pan of gnocchi and fold gently
- 5)
Serve and finish off with a squeeze of lemon, chilli flakes (optional) and some grated cheese.
