Have you had onion bhaji before?? They are our absolute favourite when we order Indian food and we had an excess of onions so gave them a go for our self and they were amazing!

Ingredients
- 1 L Grape-seed oil , or frying oil
- 4 Onions
- 2 tbsp Fresh ginger
- 2 Green chillies
- 1 tbsp Ground cumin
- 1 tbsp Ground coriander
- 1 tbsp Flakey salt
- 1 handful Coriander
- 1 tsp Bicarb soda
- 250 g Chickpea flour
- 250 ml Water

Method
- 1)
Heat 1L of frying oil in deep pot to 190C.
- 2)
Thinly slice 4 onions.
- 3)
Add to a bowl- onions, chickpea flour, finely chopped fresh ginger, finely chopped green chillies and the ground cumin and coriander.
- 4)
Slowly add the water into the mixture.
- 5)
Add a pinch of salt and then gently combine into a batter consistency.
- 6)
Once oil is at 190C add mixture in (tablespoon size).
- 7)
Cook until browned on one side (approx. 2 mins), then flip. Cook on second side till browned (approx. 1-2 mins).
- 8)
Remove from pot and drain on wire rack or paper towel.
- 9)
Once slightly cooled, serve with a sprinkle of coriander leaves over the top and a raita on the side.
