Pippi’s in a Rich Tomato Sauce

Ingredients
- 2 Tbsp Extra virign olive oil
- 100g Streaky bacon
- 1/2 Brown onion
- 1 Carrot
- 1 Celery stick
- 1 Garlic clove
- 1 Tsp Fresh thyme
- 1 Tsp Fresh oregano
- 100ml Old Fat Unicorn Pinot Noir
- 250ml Chicken bone both or stock
- 1 400g Tinned tomato
- 1kg Fresh pippis
- 1 Lemon
- Fresh rye loaf
Method
- 1)
Start by preparing your ingredients. Finely slice 100g bacon, ½ brown onion, carrot, celery and garlic clove.
- 2)
Throw a pot with a lid on medium heat and add two tablespoons of extra virgin olive oil.
- 3)
Add the bacon and sweat down for five minutes.
- 4)
Add the onion, carrot and celery to the pan. Let this sweat down for another five minutes.

Deglaze the pan with 100 ml with Old Fat Unicorn Pinot Noir, 250 ml chicken bone broth and 400g of tinned tomatoes to the pan.

Add the garlic, thyme, oregano, zest of ½ lemon, crack of black pepper and a pinch of flaky salt. Let it cook down and simmer for fifteen minutes.

Add 1kg of fresh pippis, pop the lid of the pop and cook for fifteen minutes or until the pippi shells have fully opened.
- 8)
Squeeze over the juice of ½ lemon and garnish with fresh parsley.
- 9)
Serve immediately with some crusty rye bread and a glass of @danmurphys Old Fat Unicorn Pinot Noir.
