These are delicious! Filled with sweet potato, avo, greens and delicious prawns, these will have you impressing all your amigos. Feel free to swap the prawns for fish, meat or just have them vego.

Ingredients
Tortillas
- 150g Maize flour
- 100ml Warm water
- 1/2 tbsp Salt
- 1 Lemon zest
Filling
- 1 Sweet potato
- Olive oil
- 6 King prawns
- 4 tbsp Natural yoghurt
- Paprika
- Lime
- 6 Peppers
- Hearty greens*
- Avocado
- Habanero chilli, (very optional)
Method
Tortilla
- 1)
Preheat oven to 180C
- 2)
Mix the 150g of maize flour with 100ml of warm water. (all maize flour is different so may need to add more water/flour depending on the consistency.
- 3)
Weigh the dough and divide into 6 equal amounts. Roll dough into a ball, put in middle of 2 pieces of baking paper and flatten evenly with a plate.
- 4)
Peel away one piece of baking paper and carefully flip into a very hot pan. Cook each side for approximately 1 minute.

Chop sweet potato into wedges, drizzle with olive oil and roast in oven for 20 -25 minutes.

Defrost (if frozen), butterfly and devein 6 prawns.

In a bowl combine yoghurt, paprika, zest of one lime/lemon and the juice of 1/2 a lime/lemon.
- 4)
Drizzle prawns with olive oil and paprika, char on hot BBQ or pan for approximately 3 minutes.
- 5)
Rub peppers in plate with prawn juice and olive oil, char on hot BBQ or pan for approximately 10 minutes until soft and blackened.
- 6)
Cut up the leafy greens.

- 1)
Smear the tortilla with yoghurt, 1 wedge of sweet potato, leafy greens, 1 wedge of avocado, charred pepper a prawn, squeeze of lemon/lime. Add chilli or siracha if you wish.

*Hearty greens options – cavelo nero, kale, cabbage or iceberg lettuce.
