You guys have been asking us to do pulled pork tacos for a while and now that mangoes are back in season we have delivered! This recipe tastes so fresh and summery with the use of mango and pineapple and pairs beautifully with the @heinz_au Spicy Peri Peri Mayonnaise!
Pulled Pork Tacos

Ingredients
- Spicy Peri Peri Mayonnaise from the Heinz Seriously Good Mayo Range
- 1.8-2k g Pork shoulder or collar butt
- 1 L Tropical fruit juice
- Smoked paprika
- Salt
- 2 Mangos
- 2 cobs Corn
- 1 tsp Butter
- Coriander
- 2 Limes
- 1 Shallot
- 1/4 Pineapple
- 2 Avocados
- Small tortillas for amount of people
Method
- 1)
Preheat oven to 160C fan force.
- 2)
Cover meat in smoked paprika and rub into the meat.
- 3)
Place into a deep pot or tray, cover with a couple of pinches of salt and then pour the fruit juice in next to it.
- 4)
Put lid on and pop in oven on 160C for 2 hours.
- 5)
Remove lid after 2 hours and cook for a further 2.5 hours (or until pulling to your liking).

When there is 30 mins left to go, start making your toppings.

Cut the cheeks off your mango, and cut into slices in the skin.
- 8)
Cut the kernels off your corn. Pop a teaspoon of butter in a pan with the corn kernels and warm through. Only cook for a couple of mins. Don’t cook till soft.

Chop up approx 2/3 of a bunch of coriander, feel free to chop up the stems too for some texture.

After a couple of mins, remove corn from heat and add to bowl.
- 11)
Finely dice your shallot and then add to the bowl.
- 12)
Finely dice your pineapple, aiming for the same size as your corn. Then pop into your bowl.

Add a sprinkle of salt to the bowl and mix.

Prep avocado, by cutting into slices in the skin.
- 15)
Remove pork from oven after 4.5 hours or when you’re happy that it pulls apart nicely with two forks.
- 16)
Leave to rest while you cook your tacos.
- 17)
Heat tacos in pan on low heat for 10-20 seconds on each side.
- 18)
Either pop everything in the middle of the table or assemble them for people!

If constructing them, start with the Heinz Spicy Peri Peri Mayonnaise, scoop some mango and avocado in, pop some pork on then top with the salsa, finish with a sprinkle of salt and small squeeze of lime juice on.
