Red Lentil Dahl

Our second #PieceofPearce recipe is this incredibly easy but super hearty and delicious meal. We used our @nutraorganics vegetable bone broth to create this one in just over 30 mins!

Ingredients

  • 500 g Chopped pumpkin
  • 1 Onion
  • 2 Limes
  • 2 heaped tbsp Red curry paste
  • 375 g Red lentils
  • 2 tbsp Nutraorganics vegetable broth powder, + 1L water = 1Lveg stock
  • 400 mL Coconut cream
  • Coriander
  • Chilli, (optional)

Method

  • 1)

    Finely chop your pumpkin and onion.

  • 2)

    Sweat down onion in pan with butter or oil for 5 mins.

  • 3)

    Add curry paste, finely diced pumpkin and zest of 2 limes to onion, stir and cook for 5 mins.

  • 4)

    Add stock (Nutraorganics vegetable broth with IL of water mixed), coconut cream + lentils to pot, bring to simmer then turn down to low heat. Cook for 20 mins.

  • 5)

    After 20 mins, take off the heat and add juice of 2 limes.

  • 6)

    Serve topped with chopped coriander + chilli (optional).
