The perfect dish for when your mate says, just bring a salad!! This one will go with any meat being cooked up and is perfect for hot summer afternoons (preferably alongside a G&T). We hope this one becomes a staple this summer for you!!
Summer Stonefruit Salad

Ingredients
- 3 Nectarines, (or plums, apricots, peaches)
- 1 ball Burrata, (or mozzarella)
- 4-6 pieces Prosciutto
- 1 bunch Basil
- 1 bunch Watercress, (or other leafy greens)
- 1 Lemon
- Olive oil
- Salt
Method
- 1)
Pull leaves of basil off and into salad bowl.
- 2)
Cut tops of bunch of watercress off and into bowl.
- 3)
Dress with a drizzle of olive oil, pinch of salt and the juice of a cheek of lemon.
- 4)
Mix together gently with hands.
- 5)
Cut up stone fruit into chunks (try to avoid it all the chunks being the same side) and add to the bowl then mix around.
- 6)
Then tear off some bits of prosciutto and place through out salad.
- 7)
Tear up burrata and place across salad.
- 8)
Top with a couple of leaves of basil and a few more slices of stone fruit.
