Salt & Vinegar Crispy Potatoes

- 2 kg Baby Desiree (red) potatoes
- Apple cider vinegar
- Olive oil
- Flakey salt
- Freshly cracked pepper
Cut your baby potatoes in half or quarters if they are large and place them into a large pot and fill with water until they are just covered and season generously with salt.
Place the lid on and bring to the boil for 30mins. Then drain and set over the dry pot in a colander to dry.
Cook for 1 hour in the oven on 200C or until golden and crispy.
Pull your potatoes out of the oven and give them a toss in a good whack of flakey salt and a tablespoon of apple cider vinegar or pop the vinegar into a spray bottle and spritz it over the potatoes.
