Christmas Feast

Thanks to our mates from @bankofqueensland , we’ve been tasked to pull together a festive feast for 10ppl for $150. We love a challenge and just because you’re on a budget this Chrissy doesn’t mean you can’t eat well. It’s all about selecting the right ingredients and not overcomplicating flavours.

Ingredients

Shopping List

  • 2 Bone-in lamb shoulders
  • Bunch of rosemary
  • 500 ml Vegetable stock
  • 2 Lemons
  • 1 bumb Garlic
  • 1 kg Green (Raw) King prawns
  • 150 g Salted butter
  • 2 kg Whole beetroots
  • 2 tins Lentils
  • 1 bunch Dill
  • 2 kg Baby Desiree (red) potatoes
  • Apple cider vinegar
  • Olive oil
  • Flakey salt
  • Freshly cracked pepper

Rosemary Garlic 6hr Lamb Shoulder

  • 2 Bone-in lamb shoulders
  • 1 bunch Rosemary
  • 500 ml Vegetable stock
  • Zest of 1 lemon
  • 1/2 bulb Garlic
  • Salt
  • Pepper

Roasted Beetroot, Lentil & Dill Salad

  • 2 kg Beetroot
  • 2 tins Lentils
  • 1 bunch Dill
  • Juice of 2 lemons
  • Olive oil
  • Salt
  • Pepper

Butterflied Garlic & Lemon Prawns

  • 1 kg Green (raw) King Prawns
  • 150 g Salted butter
  • 1/2 bulb Garlic
  • Zest of 1 lemon
  • Salt
  • Pepper

Salt & Vinegar Crispy Potatoes

  • 2 kg Baby Desiree (red) potatoes
  • Apple cider vinegar
  • Olive oil
  • Flakey salt
  • Freshly cracked pepper

Method

  • 1)

    Note: The lamb takes 6hrs to cook so work backward from when you’d like to sit down for lunch or dinner. E.g 1pm lunch means your lamb needs to go on at 7am.

    Preheat your oven to 150C. Pop your 2 lamb shoulders into a roasting tray with 500ml of vegetable stock and a bulb of garlic chopped in half, a handful of rosemary, the zest of one lemon and season generously with salt and pepper. Cover with foil and pop into the oven.

  • 3)

    Sit each beetroot individually on a sheet of foil and cover with some olive oil, salt and pepper and wrap them up and pop them into the oven on a wire rack with the lamb for 2hrs until soft. Bring them out and set them aside to cool.

  • 4)

    Cut your baby potatoes in half or quarters if they are large and place them into a large pot and fill with water until they are just covered and season generously with salt. Place the lid on and bring to the boil for 30mins. Then drain and set over the dry pot in a colander to dry.

  • 5)

    Prep your green prawns by running a knife down the underside of the prawn without cutting all the way through and crack them open.
    Remove the poo shoot and guts and repeat with the rest of the prawns.

  • 6)

    Make your garlie and lemon butter by melting 150g salted butter into a pan with half a bulb of garlic and the zest of one lemon.

  • 7)

    Next peel your cooled beetroot with a knife by cutting the top and bottom off the beetroot then slipping the skin off with a knife and discard. Dice the beetroots and place into favourite salad bowl with a bunch of finely chopped dill and two tins of drained lentils. Season generously with salt and pepper and add the juice of 2 lemons, a good lug of olive oil and toss it together.

    After 5.5 hrs take the foil off the lamb and return it to the oven and turn the heat up to 200C. Add the potatoes to the oven.

    After 30mins the lamb should be crispy. Remove from oven to rest. Give the potatoes another 30mins at 200C or until golden and crispy.

  • 10)

    While the lamb is resting, BBQ the prawns by basting the prawns with the butter and placing them onto a grill on a super high heat. Cook them for approx. I minute (until just cooked) then flip over for 30 seconds. Set them aside on a serving plate. Hit them with a squeeze of lemon and season with salt and pepper just before they hit the table.

    Pull your potatoes out of the oven and give them a toss in a good whack of flakey salt and a tablespoon of apple cider vinegar or pop the vinegar into a spray bottle and spritz it over the potatoes.

    Serve everything up in the middle of the table and enjoy!

Notes

Buy a small food safe spray bottle to spray the vinegar on the potatoes.
