Ingredients
- 1 head Little Gem Lettuce
- 1 knob Ginger
- 2 cloves Garlic
- 2 Carrots
- 1 Lemon/lime
- 4 Spring onion
- 1 bunch Coriander
- 2 tbsp Peanut oil
- 500 g Pork mince
- 1 handful Bean sprouts
- 2 tbsp Fish sauce
- 2 tbsp Kecap manis
Method
- 1)
Start by peeling the leaves off a head of Little Gem Lettuce, then give them a good rinse.
- 2)
Next finely chop a knob of ginger, 2 garlic cloves, 2 carrots, the whites of 4 spring onions and an inch of coriander stalks, then zest 1 lemon/lime.
- 3)
For the garnish, finely chop the greens of the 4 spring onions and remove the leaves from a bunch of coriander.

Now bring a wok to high heat, then add 2 tablespoons of peanut oil.
- 5)
Once the oil has come up to temp. add 500g of pork mince to the wok and cook for approx. 3-4 minutes (only begin breaking up the mince when the bottom of the mince develops a beautiful colour!)

Next add a handful of bean sprouts and all the chopped ingredients to the wok (not the garnish!)

Then add the juice of 1 lemon, 2 tablespoons of fish sauce and 2 tablespoons of kecap manis.
- 8)
Give the ingredients a good stir then allow to cook for a further 2 minutes.
- 9)
To serve, generously fill each of the lettuce leaves with some mince and garnish with the chopped spring onion and coriander leaves.
