This #PieceofPearce may take 3 hours but I promise it’s the easiest thing you will ever make!! Basically chuck the sweet potatoes in the oven whole, then sprinkle on some toppings and you’re good to go with an incredible side dish for any dinner party! Inspired by @chefmattstone.
Slow Roasted Sweet Potatoes

Ingredients
- 4 Sweet potatoes
- 3-4 tbsp Hummus
- Sprinkle Smoked paprika
- Small handful Finely chopped almonds
- Sprinkle Finely chopped parlsey
- 1 Lemon
Method
- 1)
Take washed sweet potatoes and put into oven in skins for 3 hours at 160C.
- 2)
Remove from oven after 3 hours and soft. Leave on bench till cool enough to touch.
- 3)
Smear a few tablespoons of hummus around a serving platter.
- 4)
Cut up or tear apart chunks of sweet potato and dot around hummus.
- 5)
Sprinkle with smoked paprika, finely chopped parsley, finely chopped almonds and a squeeze of lemon.
