Sausage Salad

Our first “Piece of Pearce” (#pieceofpearce) recipe! A new style we will speckle throughout for super simple midweek meals (get it? Piece of Piss?) !   • 2 Sweet potatoes
  • 4 Sausages
  • 1 large handful Quinoa
  • 1 large handful Kale
  • 1 Avocado
  • Goat's cheese
  • Olive oil
  • 1 Lemon


  • 1)

    Cut sweet potato into thin wedges, pop on roasting tray with baking paper, drizzle in olive oil and roast for 30-40 mins on 180C.

    Cook quinoa – follow packet instructions.

  • 3)

    Cook sausages in pan.

  • 4)

    Thinly chop handful of kale.

  • 5)

    Once cooked, slice up sausages.

  • 6)

    Mix quinoa, sausages, kale, 2 cubes of goats cheese, 1 tablespoon of olive oil, 1 cubed avocado and the juice of 1 lemon in a mixing bowl and serve.
