Steak Sanga with Homemade Onion Jam

Steak sanga with homemade onion jam! @wusthofaustralia asked us to make a recipe using their beautifully crafter new Crafter knife range. We decided to slow things down and make something that we’d ordinarily buy, onion jam! Boy oh boy what a difference it made to our steak sandwich!

Ingredients

For the onion jam

  • 3 Onions, (aiming for 600g of chopped onions)
  • 1/2 Chilli
  • 1/2 bunch Thyme
  • 1 Orange
  • 3 heaped tbsp Brown sugar
  • 2 tbsp Balsamic vinegar
  • Olive oil

For the green goodness sauce (can replace with mayo)

  • 3 heaped tbsp Yoghurt
  • 1 Avocado
  • Parsley
  • 2 cloves Garlic
  • 1 Lemon

For the sandwich

  • 8 slices Sourdough
  • Lettuce
  • Swisse cheese
  • 400-500 g Rib fillets , (can use any other steak, chicken, tofu, mushroom)

Method

To make onion jam

  • 1)

    Slice onions into 1/2 cm slices.

  • 2)

    Put onions into a pan on high heat and drizzle with a decent amount of olive oil, leave to cook for 15 mins and stir intermittently.

  • 3)

    Chop 1/2 a chili, zest rind of 1 orange, cut off the cheeks of the orange and pick leaves of 1/2 bunch of thyme.

  • 4)

    Once your onions have been caramelising for 15 mins, add your chilli, orange zest and thyme. Squeeze your cheeks of orange in.

  • 5)

    Add brown sugar, balsamic vinegar and enough water to cover your onions (approx 500mL for us but depends on your pan).

  • 6)

    Stir and turn pan down to low heat.

  • 7)

    25 mins after you add the chilli, zest and thyme, your onions jam should be ready. You will know its ready because when you pull your spoon through it, no liquid fills the space. Take off the heat.

  • 8)

    Leave to rest bunch up in pan so it becomes sticky.

  • 9)

    Once onion jam has cooled, add a good pinch of salt and stir through. Then transfer to storage vessel i.e. jar.

To make avocado cream (could replace with mayo):

  • 1)

    Put yoghurt and avocado into blender.

  • 2)

    Roughly chop cloves of garlic and add to blender.

  • 3)

    Put the zest and juice of one lemon in.

  • 4)

    Roughly chop top of bunch of parsley and put into blender.

  • 5)

    Put a good pinch of salt in and give a whizz.

To make steak sandwiches

  • 1)

    Cut rib fillets in half and bash out with the meat tenderiser.

  • 2)

    Get pan on stove on high heat.

  • 3)

    Once pan hot, add olive oil. Salt and pepper one side of steak and add into the pan. Salt and pepper the other side.

  • 4)

    After 1 minute, flip steak and pop cheese on top.

  • 5)

    After approx 30 seconds on second side remove from heat and leave to rest.

  • 6)

    Repeat with other bits of steak.

  • 7)

    Once rested, cut your steak into slices.

  • 8)

    Time to assemble!
    – Lay out your bread
    – Good dollop of avocado crema (or mayo) on one side
    – Pop your lettuce on
    – Lay on your steak
    – Last but not least, a big spoonful of onion jam!
