Sweet Corn Fritters

Surprise a special mum in your life this Mother’s Day with these delicious sweet corn fritters, go the extra mile and style up the table with these @myer goodies while you’re at it (cause let’s be honest no one actually wants brekkie crumbs in their bed!! Right?!)

Ingredients

  • 3 cobs Fresh corn
  • 1 Red onion
  • 2 Jalapeno chilli , optional
  • 1 tsp Smoked paprika
  • 1/2 tsp Sumac
  • 1 tsp Baking powder
  • 3 Eggs, + 1 egg per person for frying
  • 150 g Wholemeal flour
  • 100 ml Full cream milk
  • 1/4 Pineapple
  • 1 handful Cherry tomatoes
  • 1/2 Avocado
  • 1 Lime
  • Chilli jam
  • 1 bunch Coriander
  • 1 L Grapeseed oil , or other frying oil
  • 1 tsp Ghee, for frying eggs, can use oil
  • Salt
  • Pepper

Method

  • 1)

    In a bowl, add kernels from 3 cobs corn, 1/2 a finely diced red onion, 1 finely diced jalapeno (remove seeds for less heat), the zest of 1 lime, 1 heaped tsp of smoked paprika, 1/2 tsp of sumac, 1 tsp of baking powder, a small handful of finely chopped coriander, 3 eggs, 150g of wholemeal flour, pinch of salt & pepper and 100ml milk. Mix to a batter consistency.

    Next make the salsa by finely dicing 1/4 of a pineapple, 1 jalapeno, a small handful of cherry tomatoes,1/2 an avo, 1/4 of a red onion and a handful of coriander. Combine in a bowl with the juice of 1 lime and a pinch of salt and pepper.

  • 3)

    Heat a heavy based saucepan on the stove with 1L of grapeseed oil to 180C.  Add 1 tablespoons portions of the fritter mixture to the pot, without overcrowding it (we did ours 8 at a time).

  • 4)

    Cook for 5mins or until golden.

    – Cut one open to check they are cook through and adjust cooking time if needed. Season with salt as they cool.

  • 5)

    Repeat with the rest of the mixture.

  • 6)

    Sit cooked fritters on paper towel or a wire rack to keep them crispy and let oil drain away once they are cooked.

  • 7)

    On a high heat in a frying pan, cook 1 fried egg per person using ghee, butter or oil, until cooked.

    Construct by popping 3 fritters on a the plate followed by a few tablespoons of the salsa, a fried egg, some chilli jam and chopped coriander.
