- 800g , Chicken Mince
- 2 Tbsp , Thai Green Curry Paste
- 1 , Egg
- 125g , Panko Crumbs
- 8 Tbsp , Favourite Mayo
- 1 , Lime
- 1/2 , Sugarloaf Cabbage
- 2 , Spring Onion Shoots
- 1 Handful , Mint
- 1 Handful , Coriander
- 2 Handful , Bean Shoots
- 1/2 , Green Chilli
- 2 Tbsp , Fish Sauce
- 1 Tsp , Sesame Oil
- 1/2 Tsp , Palm Sugar
- 50g , Fried Shallots
- , Olive Oil to cook patties
Method

To make the chicken patties add two tablespoons Thai green curry paste to your chicken mince with one egg and 125g panko crumbs, mix it all through.Ā

Shape them into 4 big balls (approximately 200g each) and pop them to the side

To make the lime mayo add zest of one lime to eight tablespoons of your favourite mayo, give it a mix and set it to one side.

To make the slaw, finely slice or mandolin some green cabbage and two shoots of spring onion. Roughly shop a handful of Mint, handful of Coriander and two handfuls of Bean shoots, finely slice half a Green chilli, add two tablespoons of fish sauce, one teaspoon of sesame oil, the juice of one lime, microplane in half a teaspoon of Palm sugar and handful of fried shallots. Toss together.Ā

Whack a pan on, add oil and cook your chicken patties.4 minutes on each side.

To construct, smear a dollop of lime mayo on both sides, add the chicken patty saw slaw then pop on your lid.
