Ingredients

  • 2 Whole chickens
  • 1 stick Butter
  • 1 Large handful Rosemary
  • 1 Large handful Thyme
  • 1 Lemon zest

Method

  • 1)

    Dry chooks with paper towel or leave in fridge uncovered for 1 day to dry out the skin.

  • 2)

    Pre-heat oven to 180C

  • 3)

    Create baste by melting butter in saucepan with rosemary cut up, thyme still on stem and lemon zest.

  • 4)

    Place in oven and baste every 10 – 15 minutes. Cooking until crispy and golden for between 50 minutes – 1hour 20 minutes.

  • 5)

    Cut up and serve.

Notes

Use the left-over carcass to make chicken bone broth (see recipe)
