This triple-decker chicken cocktail club sandwich is the ultimate combination of crispy bacon, shredded roast chicken, and fresh herbs, all layered between slices of Abbott’s Bakery Farmhouse Wholemeal bread. It’s a perfect hybrid between a chicken club and a cocktail mini sandwich.

Ingredients
- 1 Loaf Abbotts Bakery Farmhouse Wholemeal Bread
- 8 Bacon rasher
- 1 Roast chicken
- 4 Tbsp heaped Mayo
- 1 Small handful Chopped chives
- 3 Spring onion shoots
- 1 Small handul Chopped dill
- 1 Lemon
- Salt
- Pepper
Method

Heat oven to 200 degrees, place bacon on a baking tray and cook for approximately 10 minutes until nice and crispy. Take it out of the oven and place it on a paper towel to cool.

Shred a whole roast chicken.

Finely slice your chives, spring onion and dill.
- 4)
In a bowl pop your shredded chicken, four heaped tablespoons of mayo, chives, spring onion, dill, zest of one lemon, juice of half a lemon, salt and pepper. Mix to combine and set to one side.

Once your bacon has cooled, dice it up to make a bacon crumb. You could also use a food processor to do this.

Grab your bread slices, spread your chicken mix onto the bottom, sprinkle with bacon crumble, add your next piece of bread, spread your chicken mix and sprinkle with bacon. Add your lid.

Serve with a side of your favourite crisps.
