      Balancing something means taste testing it a see if it need more salt, more sweetness, more acidity

    If I want to use this dough the next day do I do the bulk proof, portion out and then chuck in the fridge? Leaving the final proof to the day of cooking?

      Correct once you balled them up place them in the fridge covered (they will slowly prove in the fridge) then once they warms to room temp on the day of cooking should be ready to go

      Yes you can, I just prefer the crust the forms by doing it in the oven.

    My beef brisket is 1.3kg.
    Is the cooking time the same or do I need less cooking time ??

      Cooking time is the same for braising, if it’s smaller just make sure it submerged in the cooking liquid

    Love this recipe!!

    I’ve cooked it a few times now. Love to add chilli flakes when serving.

    Any tips on reheating to get the soup consistency back?

      i freeze mine and reheat and give it a really good stir then add a bit more lemon and also some chilli to serve
