8 Hour Beef Ribs

Ingredients
- 4 Beef ribs
- 1 Onion
- 6 cloves Garlic
- 3 Carrots
- Lemon
- 1 bunch Thyme
- 375 mL Pedro ximenez
- 1 L Stock, (or we used 2 tablespoons of Nutraorganics bone broth with 1L of water)
- Oil
- Salt
- Peppercorns
Method
- 1)
Preheat oven to 140C.
- 2)
Separate ribs.
- 3)
Roughly chop one onion and garlic.
- 4)
Halve carrots and peel lemon peel.
- 5)
Put pot on high heat and cover bottom in oil and allow to heat.
- 6)
Once oil has heated up, add beef. Colour for approx 4 mins on one side then 4 on the second side. Sprinkle with salt (unless using salty liquid stock). Remove from heat after cooked on both sides.

Reduce stove to low heat, add onions to pan and allow to sweat down for a few minutes.

Add garlic, thyme, lemon peel and carrots to the pot and stir.
- 9)
Add Pedro ximenez, a tablespoon of peppercorns, pinch of salt and stock (add liquid stock, or if using powdered stock add approx 1L of water).

Increase heat and being it to a simmer.
- 11)
Once at a simmer, add beef ribs in. Ensure there is approx 1cm of liquid above ribs. If there isn’t top up with water.

Put lid on pot and put in oven on 140C for 8 hours.
- 13)
After 8 hours, remove from oven and place onto serving dish/ plate.
- 14)
Drizzle some of the juices over, squeeze of lemon, sprinkle of thyme leaves and a pinch of salt.
