Another great side/salad for the festive season! Super super simple recipe!
Charred Broccolini

Ingredients
- 3 bunches Broccolini
- Olive oil
- 1 handful Flat leaf parsley
- 1 handful Mint
- Olive oil
- 110 g Baby capers
- Lemon
- 1 clove Garlic
- 1 handful Soaked almonds
- Hard goats cheese , (or pecorino or Parmesan)
Method
- 1)
Get BBQ cranking flat out.
- 2)
Chop very hard end of stem off broccolini.
- 3)
Put broccolini stem first into boiling water for 1 min, tops do not have to be covered.
- 4)
Then transfer into dish/plate.
- 5)
Drizzle with olive oil and toss around.
- 6)
Spread out on BBQ, approx 2 mins either side (or until getting some nice charred colouring).
- 7)
Take off BBQ.
- 8)
Finely chop up parsley, mint and baby capers together (or put through blender).
- 9)
Put into glass or jar and cover the herbs with olive oil and add juice of one lemon. Grate in a garlic clove. Give a good mix.

Roughly chop almonds.
- 11)
Drizzle a few teaspoons of the herb oil over the broccolini, toss through and then transfer broccolini to salad bowl. Can keep rest of the herb oil for other veg, meat etc.

Sprinkle almonds over the top and grate cheese over.
