Ginger Whisky Sour

The sponge

  • 2 shots Starward Whisky 'Ginger Beer Cask #7'
  • 2 shots Fresh lemon juice
  • 3 pieces Glacé ginger
  • 1 tsp Rapadura sugar , or castor sugar
  • 1 Egg white
  • Ice
  • 2 drops Bitters for garnish , optional


  • 1)

    Juice 1 lemon.

  • 2)

    Add 3 pieces of glacé ginger to cocktail shaker and use rolling pin or back of a wooden spoon to mash it up.

  • 3)

    Add 2 shots lemon juice, 1 heaped tsp rapadura sugar, 1 egg white, 2 shots of Starward ‘Ginger Beer Cask #7’ Whisky and shake (it’s important not to add the ice yet to get the cocktail to foam up).

  • 4)

    Add ice then shake until cold and pour withholding the ice into a pre chilled glass.

  • 5)

    Add a couple of drops of bitters and use a toothpick or skewer to drag through to make a love heart.
