We’re celebrating World Pasta Day. Using @sanremopasta new Gluten Free Gnocchi which has just hit Woolworths shelves nationally, we’ve curated the perfect pasta dish for the warmer weather – Green Pea, Basil & Burrata Gnocchi! The gnocchi only takes two minutes to cook… game changer!!
Green Pea, Basil & Burrata Gnocchi

Ingredients
- 1 kg San Remo GF Gnocchi
- 1 Brown onion
- 100 g Butter
- 1/2 Lemon
- 1 clove Garlic
- 1 tsp Thyme
- 300 g Frozen peas
- 30 g Parmesan cheese
- 1 Ball of burrata
- Basil
- Salt
- Pepper
Utensils
- Large pot for water
- Pan
- Zester
- Blender, food processor, nutribullet or a potato masher
Method
- 1)
Get a pot of water with a pinch of salt on the boil.
- 2)
Place another pan on a medium heat on the stove.
- 3)
Finely chop 1 onion.
- 4)
Add 100g of butter into pan on medium heat and melt down.
- 5)
Once butter has melted add chopped onions in with zest of 1/2 a lemon, 1 garlic clove (can be whole as we’ll blitz later), approx. a heaped teaspoon of thyme and cook down for 5 mins.

After 5 mins, add in 300g of frozen peas to pan.

After the peas have cooked for a couple of mins, transfer from the pan to your blender, add 30g parmesan cheese, 12 large basil leaves and then blitz into a puree.
- 8)
Transfer back into the pan and set aside until your gnocchi is cooked.
- 9)
Pop 2 packets of San Remo GF gnocchi into the pot of boiling water and cook for 2 mins, then strain.
- 10)
Pour San Remo GF gnocchi into the pan with the pea puree in it.
- 11)
Finish with a few cracks of pepper, basil leaves , juice of 1/2 a lemon and tear a ball of burrata over the top.
