Oysters with Nam Jim

Ingredients
- 2 dozen Freshly shucked or unshucked oysters
- 2 Fresh limes
- 1 clove Garlic
- 2 Kaffir lime leaves
- 1 tbsp Finely sliced coriander roots
- 1 tbsp Shaved palm sugar
- 1 tsp Fish sauce
- Few drops of sesame oil
Method

To a bowl add the juice of 2 fresh limes, zest or grate 1 clove of garlic, finely slice kaffir lime leaves, finely sliced coriander roots, finely sliced green chilli, 1 tablespoon finely shaved palm sugar, 1 teaspoon fish sauce and a few drops of sesame oil.

Shuck oyster by holding the oyster with a tea towel to avoid slipping and stabbing yourself, enter the oyster knife to the side of where the shell joins at the bottom and pry open the oyster. Remove the lid by running the oyster knife down both sides, wipe the knife clean and separate the oyster from the shell by cutting the connection, drain away the water and be sure to check for any residual shell and remove it before adding it to a plate. We used some rocks from the garden to stabilize them in the bowl but you can also use ice or make a salt mix.

Dress each oyster with Nam Jim and enjoy!
