Mango & Macadamia Ice Cream Cones

Ingredients
- 10 Old school ice cream cones
- 2 Fresh mangos
- 1 punnet Macadamia ice cream
- 100 g Honey roasted macadamias
Method
- 1)
Add 100g of honey roasted macadamias to a blender and blitz into a fine crumb and set aside in a bowl.
- 2)
Slice the cheeks off two fresh mangos and scoop out the flesh, Dice them finely and add to a another bowl and set aside.
- 3)
Pop a tablespoon of diced mango into the bottom of each cone leaving enough room for a generous scoop of ice cream.
- 4)
Heat an ice cream scoop in some boiled water then scoop out some macadamia ice cream and place it on top of the cone. Put the scoop back into the boiled water to make it easier to get a nice scoop each time and repeat the process until all cones have a scoop on top.
- 5)
Sprinkle with some of the honey macadamia crumble and enjoy!
