Ingredients
- 1 kg Cooked king prawns
- 4 Brioche rolls
- 1 Iceberg lettuce
- 1 handful Chives
- 1 Avocado
- 1 Lime
- 3 tbsp Kewpie mayo
Utensils
- Wusthof classic kitchen surfer, or another very sharp knife
- Small bowl
- Spoon
- Zester
- Sandwich toaster, or pan
Method
- 1)
Start by peeling and deveining 1kg of cooked king prawns, then chop finely.
- 2)
Using a super sharp knife, cut the tip off a head of iceberg lettuce, then very finely shave it into strips.
- 3)
Next finely chop a handful of chives and cut 1 avocado into thin slices.
- 4)
To flavour the prawns, add half the chopped chives, the zest and juice of 1 lime, then mix in approx.. 2-3 tablespoons of kewpie mayo.
- 5)
Next gently trim both edges off 4 brioche hotdog rolls, then toast them using a sandwich toaster/pan.
- 6)
To assemble the prawn rolls, start by running a knife lengthways through the hotdog rolls, then place a few slices of avo, some of the sliced lettuce and a generous spoonful of the prawn mixture into each roll.
- 7)
Finish off with a sprinkle of chives.
