Sausage and Egg NcMuffin

Ingredients
- 400 g Sausage mince , (can use lean mince but will be harder to get crispy)
- 4 English muffins
- 1 Onion
- Cheese, we used Jarlsberg Swiss cheese
- 4 Eggs
- Chutney, (we're using onion jam)
- Mayo, (we're using kewpie mayo)
- Butter
- Salt
- Pepper
- Lemon
Method
- 1)
Chop onion into 1/2 cm discs, try to keep the disc in tact.
- 2)
Put pan onto medium heat with a knob of butter, lay onion into pan and leave to cook down for approx 5 mins.

Halve the muffins.
- 4)
Slice cheese, enough for each patty to be covered.
- 5)
Lay out some baking paper and either put mince into egg ring to make the patties or lay the mince out to the thickness you want and cut out patties with the lip of a jar – you want them to be approx the same size as your muffins, ours weighed 80g each.

Pinch of salt and crack of pepper to one side of patties.

After approx 5 mins, flip onons. Then cook for another 2 minutes on the other side, then remove from pan.

Add another knob of butter to pan, increase heat to high and add patties to pan (salt and pepper side down).

After a couple of minutes, salt and pepper the top side, flip the patties and add cheese to top side of patties.

Place onions on top of patties.

After a couple of minutes remove patties from the pan.

Add another knob of butter into pan, then crack eggs in.

If you want sunny side fried up eggs cook on one side for 2-3 minutes then remove from the pan. If you want easy over egg, cook for 2-3 minutes on one side then cook for another minute on other side.

Next put muffins into the pan, cut centre side down for a minute, then remove from pan. Try to match up lid and bottom of muffin when you remove from pan.

Now assemble:
– Add a dollop of mayo to lid and bottom
– Add a dollop of chutney to lid
– Pop your patty with cheese and onion on top
– Trim up any excess of the fried egg and put on top
– Pinch of salt and squeeze of lemon
