Simple Tacos

Serves: 6 Tacos

With lots of you working from home at the moment you guys asked for some lunch ideas! This dish is great to have the elements pre made and whip together for lunch or cook it up for dinner. Pretty minimal ingredients required for this one and just use what you have.

Ingredients

  • 400 g Meat, (we used venison, but could use beef, chicken, pork, fish or even mushroom/pumpkin)
  • 2 cobs Corn
  • Butter
  • Smoked paprika
  • 2 Limes or a lemon
  • Salt
  • 1/4 Cabbage
  • Olive oil
  • Apple cider vinegar or another lemon
  • Black pepper
  • 6 Tacos
  • Chipotle mayo , (or whatever mayo/yoghurt you've got)
  • Coriander and avo if you have it
  • Hot sauce to top

Method

  • 1)

    Cut kernels off corn and put into pan on high heat with a knob of butter

  • 2)

    Sprinkle some paprika and salt over corn and add the zest and juice of 2 limes or 1 lemon

  • 3)

    Finely slice cabbage and put into bowl with a drizzle of olive oil and either a squeeze of lemon juice or a splash of apple cider vinegar Mix and squeeze with hands

  • 4)

    After the corn has been cooking for approx 5 mins set aside in bowl and clean pan

  • 5)

    Slice up meat into 1cm thick slices

  • 6)

    Have the pan on high heat and add olive oil

  • 7)

    Sprinkle salt, paprika and some black pepper on meat. Once oil is very hot, add meat salt side down

  • 8)

    Then add salt, paprika and pepper to upwards side of meat

  • 9)

    If you want medium rare, flip after 2 mins then cook for 1 min on second side. Set aside

  • 10)

    Clean and dry pan and heat tacos for approx 30 secs on each side

  • 11)

    Slice meat up

  • 12)

    Construct taco: smear of mayo yoghurt, cabbage, corn, meat, then top with coriander, avo and some hot sauce
