To celebrate the launch of @seedandsproutco’s new pantry and spice jars, we made a recipe using up bits and bobs that you always have lying around the kitchen- like stale bread and herb stalks! This one is super easy but FULL of flavour and will leave you wanting to put “stalk sauce” on just about everything!
Vegan Pangrattato & Stalk Sauce Pasta

Ingredients
- 500 g Linguine
- 3 slices Bread, (doesn't matter if they're a bit stale)
- Olive oil
- 1 bunch Parlsey stalks
- 1 bunch Mint stalks, could use basil or coriander stalks (whatever you have left over) garlic clove
- 1 tsp Mustard
- 2 tbsp Small/baby gherkins
- 1 heaped tbsp Baby capers
- 1 Lemon
- Chilli flakes
Method
- 1)
Get pot of water on the boil for pasta.
- 2)
Put 3 slices of bread into a blender/food processor and blitz into a chunky crumb.
- 3)
Put approx 50mL of olive oil into a pan on high heat.
- 4)
Put pasta into pot of boiling water and cook as per specific instructions.
- 5)
Once pan/oil up to temperature, add bread crumbs into pan and stir intermittently. Take off the heat once crunchy (approx. 10 mins).
- 6)
To create stalk sauce: add herb stalks, roughly chopped garlic clove, mustard, baby gherkins, baby capers, zest and juice of 1 lemon and 3 tablespoons of olive oil into blender.
- 7)
Once pasta is finished cooking, place it into pan with the breadcrumbs (get a bit of the pasta liquid in with it) and pour the blended stalk sauce in too.

Mix together. Optional to serve topped with some chilli flakes.
