Such an easy and quick starter idea if you are entertaining this festive season!! Nick cooked them for a Christmas catering gig last night and they went down an absolute treat! Note: use a bigger pot if doing 12, nick just used the little pot cause we were having 2 early as a taste test.
Panko Crumbed Prawns

Ingredients
- 12 Green king prawns
- 3 Eggs
- 1 packet Panko crumbs
- 1 L Grape seed oil
- Kewpie Mayo
- Salt
- Lime
- Coriander
- Chili
Method

Peel head and shell off prawn. Butterfly and devein prawn.

Pat dry prawn with paper towel.
- 3)
Whisk eggs in bowl. In separate bowl pour panko crumbs.
- 4)
Dip prawn in egg and then drain off excess
- 5)
Cover prawn in panko crumbs and press down to make crumbs stick. Then shake off excess gently.
- 6)
Fry in pot of oil at 180C (if you don’t have a thermometer, put some panko crumbs in and ensure they sizzle). Fry for 3 mins.
- 7)
Serve on dollop of kewpie, with a squeeze of lime, sprinkle of salt, chopped coriander and chopped chilli
